Olive & Celery Salad
An excellent meal on its own.
Servings: 6 cups
Ingredients
- 6 stalks Celery, diced
- 1 Cucumber, diced
- 1 large Carrot, shredded
- 3 ½ ounces Green olives, chopped
- ⅓ cup Walnuts, chopped
- 1 tsp Garlic Powder
- 1 tsp Sage
- 4 cups Whole grain sorghum, cooked
- ½ cup Garden mayonnaise (see condiments)
- Sea salt and pepper to taste
Instructions
- Combine celery, cucumber, carrot, olives, and walnuts in a medium salad bowl.
- Mix garlic powder and sage. Pour over the vegetables and toss to coat.
- Add cooked sorghum and mayonnaise.
- Season with sea salt.
- Cover and chill for at least 4 hours or overnight.
