Ceviche Bean Salad
Wholesome and easy.
Servings: 3 cups
Ingredients
- 1 medium Red onion, diced
- 1 medium Cucumber, diced
- 2 medium Tomatoes, diced
- ½ cup Cilantro, chopped
- 1 15-oz Can white beans, drained and rinsed
- 1 Avocado, chopped
- 2 Limes, squeezed
- Pinch of sea salt
- Baked whole grain tortilla chips
Instructions
- Combine onions, cucumbers, tomatoes, and cilantro in a medium-sized bowl.
- Mix in beans, avocado, and lime juice.
- Sea salt to taste.
- Serve with baked tortilla chips crumbled on top.
Notes
Instead of crumbling the tortilla chips, you can keep the chips whole and serve this as a dip or salsa.
