Ingredients

  • 1 medium Red onion, diced
  • 1 medium Cucumber, diced
  • 2 medium Tomatoes, diced
  • ½ cup Cilantro, chopped
  • 1 15-oz Can white beans, drained and rinsed
  • 1 Avocado, chopped
  • 2 Limes, squeezed
  • Pinch of sea salt
  • Baked whole grain tortilla chips

Instructions

  • Combine onions, cucumbers, tomatoes, and cilantro in a medium-sized bowl.
  • Mix in beans, avocado, and lime juice.
  • Sea salt to taste.
  • Serve with baked tortilla chips crumbled on top.

Notes

Instead of crumbling the tortilla chips, you can keep the chips whole and serve this as a dip or salsa.
