Cheeseless Cake

Ingredients
- ½ cup Cashews, raw
- ½ cup Agave
- 1 12-oz Package extra-firm silken tofu
- 1 tbsp. Xanthan gum
- 2 tbsp. Apple cider vinegar
- ½ tsp Sea salt
- 3 tbsp. Tahini
- 2 tsp Coconut extract
- 2 tsp Vanilla extract
- 1 recipe G-Mom's Nutty Pie Crust
- Sliced Blueberries, Strawberries, Mulberries, Cherries or Kiwi for topping
Instructions
- Pour all ingredients except pie crust and fruit topping into a blender or food processor and blend until smooth.
- Pour the mixture into prepared pie crust and smooth the top with a rubber spatula. Refrigerate until firm and cold, about 2 hours.
- Spread fresh fruit evenly over the top before serving.
Notes
Other fruit toppings, such as sliced peaches, or cherry pie filling can be used on this cheesecake in place of the blueberries, strawberries, and kiwi.
