Coconut Mango Pudding

Ingredients
- ¼ cup Quick cooking pearl tapioca
- ¼ tsp Sea salt
- 1 15-oz Can unsweetened coconut milk
- 1 cup Mangoes, diced, fresh or frozen
- ½ cup Sucanat
- ½ cup Soy milk
- 1 tsp Vanilla extract
- ½ tsp Cinnamon
- ¼ tsp Ginger powder
- Fresh mangoes and strawberries for topping
Instructions
- Pour tapioca, salt, coconut milk, mangos, and Sucanat into a medium-sized saucepan. Bring to a boil then immediately reduce to simmer, stirring constantly for 12–15 minutes.
- Add soy milk, vanilla, cinnamon, and ginger. Bring back to a boil, stirring constantly, for 3–5 minutes and then remove from heat.
- Pour into serving dishes and refrigerate until thickened.
- Garnish with mangos and strawberries.
