Ingredients

  • ¼ cup Quick cooking pearl tapioca
  • ¼ tsp Sea salt
  • 1 15-oz Can unsweetened coconut milk
  • 1 cup Mangoes, diced, fresh or frozen
  • ½ cup Sucanat
  • ½ cup Soy milk
  • 1 tsp Vanilla extract
  • ½ tsp Cinnamon
  • ¼ tsp Ginger powder
  • Fresh mangoes and strawberries for topping

Instructions

  • Pour tapioca, salt, coconut milk, mangos, and Sucanat into a medium-sized saucepan. Bring to a boil then immediately reduce to simmer, stirring constantly for 12–15 minutes.
  • Add soy milk, vanilla, cinnamon, and ginger. Bring back to a boil, stirring constantly, for 3–5 minutes and then remove from heat.
  • Pour into serving dishes and refrigerate until thickened.
  • Garnish with mangos and strawberries.
