Ingredients

  • 1 Banana, smashed
  • 1 cup Nondairy milk
  • ½ cup Sucanat
  • 1 tsp Vanilla extract
  • 1 tsp White vinegar
  • 1 cup Rolled oats
  • 1 cup Whole wheat pastry flour
  • ½ tsp Baking soda
  • ½ tsp Baking powder
  • ½ cup Shredded coconut
  • cup Chopped nuts (optional)
  • cup Raisins or cranberries (optional)

Instructions

  • Preheat oven to 350°F.
  • Mix banana, milk, Sucanat, vanilla, and vinegar in a small bowl.
  • In separate bowl, mix oats, flour, baking soda, baking powder, and coconut.
  • Add wet mixture to dry ingredients. Then mix in nuts and dried fruit.
  • Drop tablespoon-sized amounts onto nonstick baking sheet.
  • Bake for 15 minutes or until brown. Let cool for 30 minutes. Place cookies in a container and cover.

Notes

This recipe is also good with chocolate chips or peanut butter chips.
