Cucumber Dill Dip

Cucumber Dill Dip
Servings: 5 cups
Ingredients
- 2 small Cucumbers
- 1 pound Firm silken tofu
- 3 ½ tbsp. Lemon juice
- 2 cloves Garlic, peeled
- 1 tbsp. Fresh chopped parsley
- 1 tbsp. Dill
- ¼ cup Finely slices red onion
Instructions
- Peel and grate the cucumbers.
- In a blender or food processor, combine tofu, lemon juice, garlic, salt, parsley, and dill. Blend until completely smooth.
- Squeeze grated cucumber to remove excess moisture. Then place in a serving bowl with red onion. Add tofu mixture and stir to combine. Chill for 2–3 hours.
- Serve with pita bread or your favorite baked cracker or chip.
Notes
Reduced-fat tofu works well in most recipes and is available in most health food stores.
Choose tofu that is fresh by checking the expiration date on the package.
