Ingredients

  • 2 small Cucumbers
  • 1 pound Firm silken tofu
  • 3 ½ tbsp. Lemon juice
  • 2 cloves Garlic, peeled
  • 1 tbsp. Fresh chopped parsley
  • 1 tbsp. Dill
  • ¼ cup Finely slices red onion

Instructions

  • Peel and grate the cucumbers.
  • In a blender or food processor, combine tofu, lemon juice, garlic, salt, parsley, and dill. Blend until completely smooth.
  • Squeeze grated cucumber to remove excess moisture. Then place in a serving bowl with red onion. Add tofu mixture and stir to combine. Chill for 2–3 hours.
  • Serve with pita bread or your favorite baked cracker or chip.

Notes

Reduced-fat tofu works well in most recipes and is available in most health food stores.
Choose tofu that is fresh by checking the expiration date on the package.
