Mint Chocolate Pudding

Mint Chocolate Pudding
Servings: 6
Ingredients
- 1 cup Cashews
- 1 cup Water
- ⅓ cup Maple syrup
- 3 tbsp. Cocoa powder
- 2 tbsp. Vanilla extract
- 1 tbsp. Xanthan gum
- ½ tsp Mint extract
Instructions
- Add all ingredients to a food processor and blend until smooth and creamy.
- Cool in refrigerator for 2 hours or until thickened before serving.
Notes
Recipes using cocoa powder tend to be much lower in fat than those using baker’s chocolate.
Xanthan gum can be purchased in whole food markets and is sold by Bob’s Red Mill.
