Quick Apple Loaf
Servings: 1 Loaf
Ingredients
- 2 cups Whole wheat pastry flour
- ½ cup Sucanat
- 1 tsp Cinnamon
- ½ tsp Baking soda
- 1 tsp Baking powder
- ½ tsp Nutmeg
- ½ tsp Ginger
- ¼ tsp Sea salt
- 1 ripe Banana, smashed
- 1 cup Dairy free milk (almond, oat or coconut milk)
- 1 tsp Vanilla extract
- ½ cup Chopped walnuts
- 1 cup Apples, peeled and diced
Instructions
- Preheat oven to 350°F.
- Combine flour, Sucanat, cinnamon, baking soda, baking powder, nutmeg, ginger and salt in a mixing bowl.
- In a larger, separate bowl, mash the banana, and stir in nondairy milk and vanilla. Mix thoroughly. Add the flour mixture, walnuts, and apples. Mix to combine.
- Spread into 9 × 9 nonstick baking pan and bake for 30–35 minutes, until a toothpick inserted into the center comes out clean.
