Ingredients

  • 2 cups Whole wheat pastry flour
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • ¼ cup Maple syrup
  • 1 cup Dairy free milk (almond, oat or coconut milk)
  • 1 small Banana, smashed
  • 1 cup Raisins
  • ½ cup Walnuts

Instructions

  • Preheat oven to 350°F.
  • Combine the flour, baking powder, and baking soda in a large mixing bowl. Add the syrup, milk, banana, raisins, and walnuts. Stir just enough to mix. The batter will be fairly stiff and sticky.
  • Spoon into a 9 × 5 nonstick loaf pan and bake for 45 minutes. Remove the pan from the oven and place on a rack to cool.
