Ingredients

  • 6 cups Vegetable broth
  • 2 cloves Garlic, crushed
  • 1 medium Onion, diced
  • 1 15-oz Can chickpeas, drained and rinsed
  • ½ cup Bulgur
  • ½ cup Yellow lentils
  • 1 ½ cups Sweet potatoes, diced
  • ½ tsp Cayenne pepper
  • 1 tsp Sea salt
  • 1 tbsp. Ground coriander

Instructions

  • Sauté garlic and onions in 2 tablespoons vegetable broth.
  • Add remaining vegetable broth, chickpeas, bulgur, and lentils in a soup pot. Bring to a boil, then simmer, partially covered, for 15 minutes.
  • Add sweet potatoes and seasonings. Continue to cook for 25 minutes, or until sweet potatoes and lentils are tender.
  • Serve immediately.
