Zesty Bulgur Stew

Ingredients
- 6 cups Vegetable broth
- 2 cloves Garlic, crushed
- 1 medium Onion, diced
- 1 15-oz Can chickpeas, drained and rinsed
- ½ cup Bulgur
- ½ cup Yellow lentils
- 1 ½ cups Sweet potatoes, diced
- ½ tsp Cayenne pepper
- 1 tsp Sea salt
- 1 tbsp. Ground coriander
Instructions
- Sauté garlic and onions in 2 tablespoons vegetable broth.
- Add remaining vegetable broth, chickpeas, bulgur, and lentils in a soup pot. Bring to a boil, then simmer, partially covered, for 15 minutes.
- Add sweet potatoes and seasonings. Continue to cook for 25 minutes, or until sweet potatoes and lentils are tender.
- Serve immediately.
