Ingredients

  • 1 cup Raw Cashews (150g) soaked for 1 hour in hot water
  • 3 cup Water (720ml)
  • 1 Tbsp Maple Syrup
  • ½ tsp Vanilla Extract
  • ¼ tsp Salt

Instructions

  • Add the soaked cashew nuts to the blender with the 3 cups of water, maple syrup, vanilla and salt.
  • Blend very well until completely smooth. You don't need to strain this milk as it blends completely smooth. If it is still a little gritty then just blend it for longer.
  • Place into a glass container with a lid and keep refrigerated where it will keep for around 3-5 days.
  • Use in smoothies, over cereal, in tea and coffee, and just drink it as is

Notes

To soak the cashews, add them to a bowl and then pour over boiling water from the kettle. Leave them to soak for 1 hour and then drain and add to the blender.

Prep time includes the time spent soaking the cashews.

This recipe makes around 3 and ½ cups of cashew milk.

Essiac TeaEssiac Tea
Essiac Tea

Essiac tea is a popular herbal tea touted for its purported anticancer properties.

In the 1920s, Canadian nurse Rene Caisse promoted Essiac tea as a natural cancer treatment, claiming that it was given to her by a patient who originally received it from an Ontario Ojibwa medicine man.

Though the tea is still said to be a Native American natural remedy, evidence to back up this claim is limited.

Essiac tea is a blend of different herbs, including burdock root, slippery elm, sheep sorrel and Indian rhubarb.

In addition to its purported anticancer properties, Essiac tea is also believed to enhance detoxification, boost immune function and reduce inflammation.

The tea is usually sold in powder form, but capsule and tea bag varieties are also available.

Traditionally, it’s made by combining two ounces (57 ml) of concentrated tea with the same amount of heated spring water.

Manufacturers of the product recommend drinking 1-12 fluid ounces (30-360 ml) daily for best results.

Essiac tea is made from a blend of herbs claimed to fight cancer, improve immunity, increase detoxification and decrease inflammation.

  • 2 cup Whole wheat pastry flour

Instructions

  • For the muffins, preheat oven to 375°F.
  • Line a 12-cup muffin pan with paper liners (or use a nonstick pan).
  • Combine flours, baking powder, baking soda, and cinnamon in a medium-sized mixing bowl.
  • In a separate large bowl, mix together bananas (you can mash them right in the mixing bowl), milk, and Sucanat.
  • Pour the dry ingredients into the wet mixture and stir until well mixed. Add the walnuts, and spoon the mixture into the muffin cups.
  • For the topping, mix together Sucanat and cinnamon (and oats, if using) in a small bowl. Combine with a fork until crumbly. Press on top of muffins.
  • Bake in preheated oven for 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool slightly before serving.

  • Gently fold in the blackberries.
  • Spoon mixture evenly into the prepared muffin cups.
  • Sprinkle coconut over the tops for decoration, if desired.

Raspberries can be substituted for the blackberries in this recipe.

  • Fill the prepared muffin cups to the top and bake 25–30 minutes, until the tops bounce back when lightly pressed. Remove from the oven and let stand 1–2 minutes; then remove the muffins from the pan. Cool for 30 minutes before eating and then store in an airtight container.

Notes

Store cooled muffins in an airtight container in the refrigerator. For longer-term storage, keep them in the freezer.

  • Add the corn, applesauce, and maple syrup to the dry ingredients and mix. Add egg replacer and milk, and stir until everything is well mixed.
  • Pour into a 9 × 9 nonstick baking dish.
  • Bake for 35 minutes or until the top is firm and a knife inserted in the center comes out clean. Cool before serving.

Notes

Serve with beans and cooked kale or other greens.

If you want a more Italian herb flavor, add 1 teaspoon oregano and 1 teaspoon basil.

  • Combine flour, herbs, and salt in a large mixing bowl. Stir in the yeast.
  • Make a well in the center of the flour and pour in the molasses and water. Mix by hand to make a soft, slightly wet dough. Knead until the dough leaves the sides of the bowl clean and feels elastic.
  • Place the dough in a nonstick (small) bread pan, cover with oiled plastic wrap, and leave to double in a warm, draft-free place for about 1 hour.
  • Preheat oven to 350°F.
  • Bake for about 35 minutes. Test to see if bread is ready by tapping the top with your knuckles. Bread is done when it sounds hollow.

  • Stir in orange juice and egg replacer. Mix until well blended.
  • Fold in cranberries and nuts. Spread evenly in a nonstick bread pan.
  • Bake for approximately 45 minutes or until toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from the pan.

Notes

If you do not have an egg replacer, you can substitute ¼ cup prune paste (to make a supply of prune paste, mix ½ cup prunes and 1 cup water).

You can also use this recipe to make muffins and serve them for breakfast.

This recipe is great for thanksgiving and other holidays.

  • 2 Tbsp Non-dairy Chocolate Chips

Instructions

  • Line a muffin pan with 15 parchment cupcake liners.
  • Preheat the oven to 350 F/177 C.
  • In a large mixing bowl, combine oats, oat flour, flax meal, cinnamon, and salt. Stir to combine.
  • Mash or puree the bananas. Ideally, use those that are overripe, using a food processor or immersion blender. This should come out to about 1 1/3 cups / 300 grams of mashed banana.
  • Add the banana, brown rice syrup (see note), raisins, and chocolate chips (if using). Stir until thoroughly combined.

     Note: Don’t substitute maple syrup for brown syrup; it’s not thick or sticky enough. Use overripe (freckled) bananas. Not only are they more digestible, they also offer a great deal of natural sweetness.

  • Using a cookie scoop, place 1/4 to 1/3 cup / 60 to 80 milliliters of the batter in each muffin cup. Use a spatula or your fingers to lightly pack in the mixture. (Dampen your fingers to make it easier.)
  • Bake for 20 minutes.
  • Remove and let cool in the pan for about 5 minutes, and then transfer to cooling rack.
  • Enjoy warm or cooled. Store in an airtight container in the fridge.

  • 1 ½ cup Raw Cashews (225g) Soaked for 1 hour
  • ½ cup Canned Coconut Milk (120ml) Full Fat, Unsweetened

  • 2 capsules Probiotic
  • 2 Tbsp Maple Syrup
  • 8 Strawberries Plus more for serving

Instructions

  • Soak the cashews in water for 1 hour. Then rinse and drain them and add to a blender jug along with the coconut milk, lemon juice, vanilla, sea salt, maple syrup and strawberries.
  • Open up the capsules of probiotics and empty the contents into the blender jug.
  • Blend until it is very smooth and no longer grainy. This may take a few minutes.
  • If you have a tamper attachment with your blender, then use this to push the ingredients down onto the blades.
  • If not, then stop regularly and scrape down the sides of the blender and blend again.
  • Pour out into two bowls and serve with fresh sliced strawberries.

For the Vegan Bacon:

  • 2 cup Vital Wheat Gluten (300g)
  • ¼ cup Nutritional Yeast (15g)
  • 2 tsp Smoked Paprika
  • ½ tsp Onion Powder
  • ½ tsp Garlic Powder
  • ½ cup Vegetable Stock (120ml)
  • ¼ cup Canola Oil (60ml)
  • ¼ cup Tamari (60ml) (Gluten Free Soy Sauce)
  • ¼ cup Maple Syrup (60ml)
  • 2 Tbsp Liquid Smoke
  • 1 Tbsp Dijon Mustard
  • 2 Tbsp Tomato Paste

For the Marinade:

  • 2 Tbsp Tamari (Gluten Free Soy Sauce)
  • 2 Tbsp Maple Syrup
  • 1 tsp Smoked Paprika
  • 1 Tbsp Tomato Paste
  • ¼ tsp Onion Powder
  • ¼ tsp Garlic Powder
  • tsp Liquid Smoke

For Frying:

  • Grapeseed Oil

Instructions

  • Add the vital wheat gluten, nutritional yeast, smoked paprika, onion powder and garlic powder to a mixing bowl and mix together.
  • Then, in a measuring jug, add vegetable stock, canola oil, tamari, maple syrup, liquid smoke, dijon mustard and tomato paste and whisk together.
  • Add the wet ingredients in with the dry and mix in with a spoon until you have a thick dough.
  • Move the dough to a wooden cutting board and knead it for 5-8 minutes until it is pretty stiff and firm. 5 minutes is sufficient if you have very strong hands, if you have weaker hands then up to 8 minutes may be needed. Watch for how the dough feels to know when it has been long enough. It should be firm and spring back when stretched. See the blog post for more notes about kneading.
  • Form the dough into a square as much as you can, loosely wrap it in foil and steam it for 20 minutes. The water should be boiling before you add the steamer basket so that it steams properly for the full 20 minutes.
  • After 20 minutes of steaming unwrap it from the foil and allow to cool completely. When it's cool, use a sharp knife to cut it into even slices.
  • Prepare your marinade sauce by adding tamari, maple syrup, smoked paprika, tomato paste, garlic powder, onion powder and liquid smoke to a measuring jug and whisk with a mini whisk until smooth.
  • Heat up a frying pan with the grapeseed oil and then add the first batch of bacon slices (we did 5-6 slices at a time) and brush on the marinade sauce. Flip the slices and brush the marinade sauce onto the other side. Flip the bacon slices regularly until charred on each side.
  • Keep leftovers in the fridge and enjoy within about a week. It's also freezer friendly if you want to freeze it, and then thaw overnight in the fridge.

Notes

Vital Wheat Gluten. For the best accuracy weigh your Vital Wheat Gluten. If using only the cup method, this is 2 packed cups.

Canola Oil. I have only made this with canola oil, but I imagine a different oil could also work. I would not use coconut oil though (too thick and flavored).

Liquid Smoke. It is a lot of liquid smoke but really works in creating that ‘bacon’ flavor.

Grapeseed Oil. This has a high smoke point so really assists in getting the bacon charred which also assists in the flavor. You can use a different oil for frying though. We used about 2 Tbsp during frying but you may need more or less depending on the pan you use.

Prep time includes the time spent steaming, but does not include cooling time for the seitan before slicing.

Gluten-Free. Unfortunately this vegan bacon cannot be made gluten-free as it relies on the vital wheat gluten for the structure and consistency and there are no substitutions that can be made for it.

  • ½ cup Grounded whole grain sorghum
  • 1 tbsp. Freshly ground flaxseeds (linseed)
  • ½ tbsp. Freshly ground chia seeds
  • ½ tbsp. Whole grain chia seeds
  • 1 tsp Sea salt
  • 1 sachet Ionic Coral Calcium (Ionic Sea)
  • 2 tbsp. Flaxseed oil
  • Sweetener to taste
  • Fruit of choice (Optional)

Instructions

  • In a sauce pan, bring the water to a boil on high and add the salt.
  • Sprinkle the grounded whole grain sorghum gently into the water while stirring with the whisk to prevent it from clotting. When it starts to boil again, turn the heat down and let it simmer for 20minutes. Stir often to prevent it from clotting and sticking to the pan.
  • After 20 minutes add the flaxseed oil, Ionic Coral Calcium (Ionic Sea), whole grain chia and sweetener and stir it in.
  • Grind the flax seeds and chia seeds in a coffee grinder and add it to the porridge. Mix it in well. At this time the porridge will get thicker. Add additional water to your preferred consistency. Dish up and enjoy.
  • You can add fruit to the porridge if you feel like it at this stage.

Notes

Only grind the flaxseeds and chia seeds when the porridge is done cooking and ready to be consumed. Mix the grounded seeds in with the porridge and consume within 15 minutes. It starts to lose some of its nutrients as soon as it is cracked open.

You can purchase whole grain sorghum grains and ground it to a flour in your coffee grinder if you cannot find whole ground sorghum flour in your local stores.

  • Taste test and adjust as needed with a little more salt and pepper for more flavor. If you use a different vinegar other than red wine vinegar, then you may want to add a teaspoon of maple syrup for flavor balance.
  • Pour over your salad and enjoy!
  • Keep leftovers in the fridge and enjoy within one week.

Notes

One batch of this dressing (as per the recipe) will make enough vinaigrette to dress a salad large enough for 4 people.

  • Add apple cider vinegar, water, light brown sugar, maple syrup, soy sauce, onion powder, garlic powder, cinnamon and ground black pepper to a saucepan and heat on medium heat.
  • Whisk the sauce while heating to dissolve the sugar and mix it well.
  • Heat to a simmer and then turn off the heat and let it cool completely.
  • Transfer to an airtight container and refrigerate. It will last for up to 2 months in the fridge.

Notes

Apple cider vinegar – I don’t recommend substituting this at all, as apple cider vinegar has that perfect tangy flavor for this sauce.

Maple syrup – we love the flavor that this brings to this sauce, but you could substitute a different syrup or substitute it for light brown sugar.

Soy sauce – if you’re gluten-free then make sure to use a gluten-free soy sauce.

Storing – keep it stored in an airtight container in the fridge where it will last for up to 2 months. Just keep an eye on it when it’s past 1 month and use your best judgement on whether it’s still good.

This recipe makes around ⅔ cups (160ml) sauce.

You can use different oils other than avocado oil with varying taste results.

It is crucial that the soy milk is unsweetened, using a regular sweetened variety gave this a very odd taste.

Don’t switch out the soy milk for another non-dairy milk. Soy milk emulsifies very well and other plant milks may not. (You can experiment if you want to)

Ingredients must all be at room temperature otherwise this recipe may not work out as intended.

The best results in this recipe come from using an immersion blender (handheld blender).

This recipe makes around 1 and ½ cups of vegan mayo.

Store your vegan mayo in a sealed jar in the fridge where it will stay good for around 5 days.

  • 56 ounce Whole Tomatoes (850g)
  • ½ Onion Minced
  • 6 cloves Garlic Minced

Instructions

  • Add the olive oil to a heavy bottom pot together with the onion and a pinch of sea salt. Sautée until translucent but without turning brown so keep an eye on it and stir often.
  • Add the minced garlic and give it a quick stir. Allow it to infuse the oil for about 20 seconds or so taking care not to burn it.
  • Using your hands roughly crush the tomatoes as you add them to the pot with the onion and garlic. Add the bay leaves and fresh basil, stir and bring to a gentle simmer.
  • Partially cover with a lid and cook for about 30 minutes until thickened to your liking. Keep an eye in it during cooking to make sure the sugars from the tomatoes won’t stick to the bottom and burn. Stir well a few times.
  • Remove the sauce from flame, discard the bay leaves and season to taste with sea salt.
  • At this point you can serve it with your favorite whole-wheat pasta, in a lasagna, as a dipping sauce or store in jars for later use. It also freezes well.

Notes

If you like things on the spicier side remember to add a good pinch of red pepper flakes in the beginning of cooking. However that will make your sauce “ angry or Arrabbiata “ .

Omit the oil on a WFPB diet and simply replace with a splash of water, veggie stock or dry white wine.

  • Heat a clean, dry cast iron or heavy duty skillet over medium high heat and add the sesame seeds. Stir frequently until they begin to turn golden brown and then stir constantly. Be careful, sesame seeds burn very easily.
  • Once they're toasted, let them cool a few minutes then add them to a food processor.
  • Start by adding 3 tablespoons of olive oil. Process the mixture into a paste, scraping down the sides. Add more olive oil until you reach the desired consistency (*see Note)
  • Makes a little less than 3/4 cup tahini paste, depending on how much olive oil you use.
  • Store the tahini in an airtight jar in the fridge and it will last for several months.  Stir it thoroughly before you put it in the fridge because once it's chilled it's difficult to stir.

Notes

The texture may be slightly gritty, which isn’t a problem, you won’t notice it at all when you use it to make hummus for example. But if you want it a little smoother you can run it again through a high-powered food blender (I used my Vitamix).

Instead of olive oil you can also use sesame oil, but olive oil is traditional. (Use raw sesame oil, not toasted, or the tahini will have an overpowering “Chinese food” flavor.)

Instructions

  • Finely grate cucumber with the skin on – should yield about 1 cup. Then either set in a fine-mesh strainer set over a small mixing bowl or transfer to a clean, thin towel and squeeze out excess moisture. The remaining amount should be about 1/4 cup.
  • Add coconut yogurt to a large mixing bowl and add strained cucumber, garlic, dill, salt, pepper, lemon juice, and olive oil(optional). Stir to combine.
  • Taste and adjust flavor as needed, adding more salt for overall flavor, garlic for zing, lemon for acidity, or dill for herbiness.
  • Serve immediately, or store in the refrigerator (where it will thicken) up to 5 days, sometimes longer depending on freshness of yogurt.
  • This Tzatziki is delicious on its own, but it also pairs well with Greek-inspired recipes.

Notes

If you aren’t making your own coconut yogurt, the best unsweetened (Greek style) brands are Culina and CoYo, which can be found at Whole Foods and most health food stores.

  • Pour tomatoes into a large bowl and crush with your hands. Pour 1 cup water into can and slosh it around to get tomato juices. Reserve.
  • In a large skillet (do not use a deep pot) over medium heat, heat the oil. When it is hot, add garlic.
  • As soon as garlic is sizzling (do not let it brown), add the tomatoes, then the reserved tomato water. Add whole red pepper flakes, oregano (if using) and salt. Stir.
  • Place basil sprig, including stem, on the surface (like a flower). Let it wilt, then submerge in sauce. Simmer sauce until thickened and oil on surface is a deep orange, about 15 minutes. (If using oregano, taste sauce after 10 minutes of simmering, adding more salt and oregano as needed.) Discard basil (if using).

  • 1 tbsp. Cold pressed flaxseed oil

Instructions

  • Mix the flaxseed oil with the cottage cheese. Never by hand, and preferably using an immersion blender, blend the two foods for 1 minute. This will result in a whipped cream like consistency.
  • Grind 2 tablespoons of either golden or brown flaxseeds in a coffee grinder for 1 minute until an airy, fluffy appearance results. Place ground flaxseed in a separate glass bowl. Add the cheese and oil mixture to the ground flax seed and stir with a spoon to combine.

Always grind flaxseeds fresh and consume within 15 minutes of grinding

Mix organic 2% (or higher) fat cottage cheese and flaxseed oil in a 2:1 ratio and blend until no visible oil remains floating

  • ½ cup White Granulated Sugar (100g)

Instructions

  • Place the chickpea liquid (aquafaba) and cream of tartar into the bowl of your stand mixer.
  • Start at slow speed and whip until foamy.
  • Then gradually increase speed until white and glossy and stiff peaks start to form.
  • Add the sugar in slowly while whipping at fast speed.
  • Add in the vanilla.
  • Keep whipping until glossy stiff peaks form.
  • Preheat your oven to 250°F (121°C).
  • Line a baking tray with parchment paper.
  • Pipe the meringue mix into cookie shapes onto the parchment lined tray. Alternatively you can spoon it out, but I found piping to be much easier.
  • Place into the oven and bake for 45 minutes. After 45 minutes, switch off the oven but DON’T OPEN IT (excuse the caps, but this part is very important). Leave the oven off, but don’t open it for one hour. Time it.
  • After the meringues have baked for 45 minutes and then sat in the oven for a further 60 minutes without opening the oven, remove them from the oven.
  • They should be airy crispy perfection! If the weather is at all hot or humid, put them in an airtight container and store them in the fridge for the most long lasting results.

Notes

This amount of chickpea liquid is roughly half of what you’ll get from one 15 ounce (425g) can of chickpeas when drained. You can throw out the rest or use it for other egg replacement purposes or for another batch of vegan meringue.

Keep the meringues stored in a covered container in the fridge for 5 days.

  • Place the can of coconut cream into the coldest part of your refrigerator and leave it there overnight.
  • The next day, take it out and carefully open it (don’t shake it around!).
  • You’ll see that the cream part has separated from the water and risen to the top.
  • Scoop that out into the bowl of an electric mixer, leaving the water behind. You can use the water in a smoothie or throw it out.
  • Starting at slow speed gradually increase speed until you achieve a whipped cream consistency.
  • The harder the consistency of the cream when you scoop it out, the quicker this will be.
  • Once you have whipped cream consistency, you can stop right there. You're done! OR:
  • Add some powdered sugar and vanilla for a sweetened cream.
  • Whisk again until mixed in.

Notes

I have heard of cases where the coconut cream and water doesn’t separate and it’s still very liquid inside the can, this would mean you got a dud can. For this reason, have a back up can in the refrigerator – you can always use the dud for making a creamy sauce.

Some brands of coconut cream are all hard cream with very little water left behind after chilling, this is great! If it also whips well then make a note of the brand and stick with that one.

The best results come about in this recipe when the cream is very firm to start off with. If your cream is floppier when you start, you’ll have to whip it for longer, and even then, it might not reach your desired firmness. If you need a ‘fix’ for a batch that won’t firm up enough, you can add ¼ to ½ teaspoon of xanthum gum, just be careful because this can sometimes firm it up more than you want it to! But this works as a fix.

I’ve done it with a hand whisk (no electric mixer) and it is possible, but generally only in cases where the cream is quite firm and hard to start with. Even then it uses a lot of arm power.

  • In a separate bowl, mix applesauce, molasses, egg replacers, vanilla, and ¼ cup water. Add to dry ingredients and mix well.

Instructions

  • Crush graham crackers in food processor. In separate bowl, add walnuts, coconut, and peanut butter. Stir in crushed graham crackers.
  • Slowly add milk and mix. If mixture does not hold together, continue adding additional milk until all ingredients stick together. However, don’t make it too soft, and, if necessary, use your hands.
  • Spread mixture evenly into a 9 × 9 nonstick baking dish.
  • In a saucepan, melt chocolate chips together with rice or almond milk over medium heat. Stir until smooth.
  • Spread chocolate mixture on top of peanut butter mixture. Refrigerate for 1 hour or until hardened. Cut into squares and enjoy!

  • Add water, tomato paste, beans, oregano, and thyme. Bring to a simmer and cook, uncovered, for 15 minutes. If needed, add an additional ½ cup water. Season with salt.

  • If you do not have any cooked quinoa on hand, prepare 1 cup (170 grams) of dry quinoa according to package directions to yield roughly 2 cups (370 grams) cooked. You may also substitute rice for the quinoa. This can be done several days in advance and served cold or reheated if preferred.
  • Prep the remaining bowl ingredients. Chop kale so that you have about 3 cups (63 grams) chopped. You may substitute spinach for the kale. Cube and roast or steam sweet potatoes. You should have about 2 cups (400 grams) of cooked sweet potato cubes. Drain and rinse black beans, if using canned. Dice the bell pepper; you should end up with about 1 cup of chopped bell pepper.
  • In four bowls, arrange approximately equal amounts of the quinoa or rice, kale or spinach, sweet potato, black beans, and bell pepper.
  • In a blender, combine about 3/4 cup mango flesh (124 grams) (fresh or frozen and thawed), hemp seeds, juice of 1 lime or vinegar, the white portion of a green onion, mustard, salt, pepper, 1/4 cup (60 milliliters) of water, and 1 tablespoon (15 milliliters) of the syrup (or coconut nectar, if preferred). Puree until very smooth.
  • Taste, and add 2 to 3 tablespoons (30 to 45 milliliters) water to thin (if desired) and another tablespoon of syrup or nectar to sweeten it.
  • If you'd like to pair this dressing with some spicy foods or add an extra punch of flavor, try adding 1 to 2 tablespoons (15 to 30 milliliters) of chopped cilantro or basil while pureeing.
  • Add 2 tablespoons of dressing onto each bowl and save remaining dressing for other uses throughout the week.

  • Serve on top of sorghum.

Notes

Coconut milk, in place of almond milk, adds a nice flavor to this dish.

The final consistency of this recipe should be thicker than a soup, more like a stew, and works well served with warmed pita bread.

  • Filling: Preheat oven to 425°F (218°C). Peel and dice the potatoes into ½ inch cubes, then toss together with oil and spices. Spread onto a baking sheet and bake for 25 minutes. Pull out the baking sheet and add the beans, tossing to combine with the potatoes. Put back in the oven for 5 to10 minutes, or until sweet potato is fork-tender and beans are hot.
  • Sauce: Meanwhile, stir together all sauce ingredients, adding more or less adobo sauce to suit your spice tolerance.
  • Assembly: Spoon sweet potatoes and beans into tortillas, topping with adobo sauce and your chosen toppings.

  • ¾ cup Vegan Chicken Stock (180ml)
  • 1 ½ cup Vital Wheat Gluten

For Frying:

  • Vegan Butter or sub oil
  • Vegan Chicken Spice to rub into fillets

For Serving:

  • Fresh Lemon
  • Fresh Parsley
  • Sea Salt and Black Pepper

Instructions

  • Add the chickpeas, nutritional yeast, garlic powder, onion powder, thyme, coriander powder, sage, vegan chicken spice and dijon mustard to the food processor along with the vegan chicken stock and process until well mixed.
  • Pour this out into a mixing bowl and add the vital wheat gluten. Stir it in with a spoon and then almost immediately get in there with your hands to mix it properly and knead just a few times.You just want it to go from soft and sticky to just starting to become firm.*
  • Transfer to a cutting board and flatten it out before cutting into 4 pieces. Wrap these 4 pieces in foil (loosely, they expand while steaming) and place into a steamer and steam for 20 minutes.
  • When they have finished steaming, let them cool for a few minutes and then unwrap them from the foil.
  • Cut each fillet lengthways down the middle (see photos) so that you have 8 fillets.
  • Sprinkle them with vegan chicken spice and rub in with your fingers.
  • Heat some vegan butter* and then fry the fillets in the butter, turning over regularly until browned and crispy on both sides. Depending on the size of your pan you will likely have to do this in two batches.
  • Serve with fresh parsley and fresh lemon, and a sprinkle of sea salt and black pepper.

Notes

It’s okay if there is a little vital wheat gluten left at the bottom of the bowl that doesn’t mix in. Definitely don’t knead too long just because you’re trying to get everything mixed in.

I used 1 Tbsp vegan butter per batch and I fried them up in 2 batches, you might want to use more or less, you can also substitute for oil but I really like the flavor blend with vegan butter.

  • 1 ½ cup Vital Wheat Gluten

Maple Glaze:

  • cup Light Brown Sugar (66g)
  • cup Vegetable Stock/Broth (80ml)
  • 2 Tbsp Toasted Sesame Oil
  • 1 tsp Smoked Paprika
  • ½ cup Maple Syrup (120ml)
  • 1 Tbsp Soy Sauce

Instructions

  • Add chickpeas, vegetable stock, sesame oil, soy sauce, tomato paste, nutritional yeast, smoked paprika, onion powder, garlic powder, salt, liquid smoke and red gel food coloring to the food processor and process until smooth.
  • Transfer to a mixing bowl and add vital wheat gluten. Mix briefly until roughly mixed.
  • Now get in there with your hands and knead for a minute to a minute and a half, until the dough is soft but firm.
  • Form the mixture into a ham shaped ball and wrap tightly with foil.
  • Place into a steamer basket over a pot of boiling water (or any kind of steamer that you have) and steam for 1 hour, then remove from the steamer and allow to cool at room temperature for 20 minutes.
  • While the ham is cooling prepare the glaze by adding light brown sugar and vegetable stock to a measuring jug and mixing until the sugar has dissolved.
  • Add toasted sesame oil, smoked paprika, maple syrup and soy sauce and whisk together until well mixed.
  • Preheat the oven to 350°F (180°C).
  • When the ham has cooled remove it from the foil. Use a sharp knife to make shallow cuts across the top of the ham from one corner to the other. Then repeat, going from the other corner to corner, leaving a criss cross pattern.
  • Place the ham into a non stick baking dish. Pour ⅓ of the glaze over the top and use a brush to brush it in well, making sure that the glaze is covering the ham.
  • Bake for 25 minutes, bringing it out at the 10 minute mark and again at the 20 minute mark to pour over another ⅓ of the glaze each time and brush it in again.
  • When the ham has finished roasting, remove it from the oven and allow it to cool slightly at room temperature. The glaze will thicken as it cools. Use the brush to scoop up the glaze from the bottom of the dish and brush onto the top of the ham again.
  • Now it’s ready to be sliced and served.
  • Serve with a drizzle of glaze (from the bottom of the pan) over the top and some fresh chopped parsley. Leftover glaze from the bottom of the roasting pan can be scooped up and placed into a jug to be served alongside the sliced ham.

Notes

Chickpeas: We used 1 full 15 ounce (425g) can of chickpeas (drained). If you’re using cooked chickpeas then the amount to use would be 1 and ½ cups.

Vital Wheat Gluten: This is an essential ingredient in this recipe so unfortunately this recipe cannot be made gluten-free.

Make ahead: You could make this up to when it has been steamed and then let it cool, cover and refrigerate. When you’re ready, glaze and roast it as usual.

Storing: This vegan ham keeps very well in the fridge for up to a week!

Freezing: It is best when freshly made, but leftovers can also be frozen. Thaw in the fridge.

  • Add the drained chickpeas to your mixing bowl and mash with a fork.
  • Add the walnuts to the food processor and process into crumbs. Add in with the chickpeas in the mixing bowl.
  • Add the chopped onion and garlic.
  • Add the nutritional yeast, soy sauce, tomato paste, hoisin sauce, garlic powder, onion powder, salt, cumin, coriander powder, oregano, smoked paprika and liquid smoke and mix together.
  • Add the vegetable stock and mix in.
  • Add the vital wheat gluten and mix in. The mix will be very thick. Don't overmix as this will cause the gluten to become more tough and chewy, just mix it until mixed and then stop mixing.
  • Preheat the oven to 350°F (180°C) and scoop the meatballs onto a parchment lined baking tray, using a heaped tablespoon measure and then rolling into balls. Aim for 36 meatballs.
  • Bake for 15 minutes and then flip the meatballs and bake for another 15 until they're browned and crispy on both sides.
  • Serve right away with ketchup or barbecue sauce or if you want to serve them in a marinara sauce then heat up your marinara sauce and then add the meatballs to the sauce and serve over spaghetti.
  • Keep leftovers in the fridge and enjoy over the next 3-4 days.

Weigh the vital wheat gluten on a food scale for best results in this recipe. If using only the cup method then this is based on a packed cup.

Vital wheat gluten is a crucial ingredient in these meatballs and can’t be replaced with regular flour. This is also the reason that these vegan meatballs don’t adapt to gluten-free at all.

  • After steaming place them back onto the wooden board and open the tinfoil (be careful of the steam escaping). They are now cooked and ready to use! But if you’d like to grill them (as we did) then keep reading.
  • Heat up a grill pan and brush it with grapeseed oil or another high heat oil.
  • Place the sausages onto the hot grill pan and let them cook for a few minutes so that the grill lines sear into the sausages before turning them and cooking on the other side.
  • In the last minute of grilling, brush the sausages with vegan barbecue sauce (optional).

Notes

Chickpeas – we used canned chickpeas in this recipe, but any cooked chickpeas will work fine.

Vital wheat gluten – this is pure gluten powder. It is responsible for the meaty texture of these vegan sausages. There is NO substitute for this.

Vegetable stock – can be replaced with vegetable broth, whichever is easiest.

There is no need to knead. You don’t need to knead the dough. Mixing the ingredients briefly, forming it into a dough and then the minimal handling of the dough while you cut it into four pieces and form those pieces into sausage shapes, is enough to activate the gluten sufficiently to get the perfect texture for these sausages. They are firm and ‘meaty’ without being too chewy. If you do want firmer sausages then you can knead the dough just a few times and that is sufficient to firm them up even more.

Grill pan – You can fry these on a grill pan as we did to get the pretty grill lines seared into the sausages. OR you can just fry them up in any frying pan or skillet. The sausages are actually cooked after steaming, so if you just want to slice them up at that point and place them on pizza or use them in another dish, that works too.

Storing: Keep leftover sausages stored in a covered container in the fridge for up to a week.

Freezing: You can freeze the sausages after steaming them. Let them cool completely and then transfer to a freezer safe container and freeze for up to 3 months. Let them thaw in the fridge and then use them as you like, grill them, fry them, slice them etc.

Instructions

  • Add the chickpeas, nutritional yeast, garlic powder, onion powder, cumin, coriander powder, oregano, soy sauce, tomato paste, paprika, black pepper, dijon mustard, liquid smoke and vegetable stock to the food processor and process until well mixed.
  • Transfer to a mixing bowl and add the vital wheat gluten. Stir in with a spoon briefly and then get in there with your hands, mixing it into a dough. Knead the dough for around 2 minutes, you want it to go from sticky and soft to firm and stretchy, so that when you pull it, it snaps back into place. See our full post for lots more info on kneading. Make sure you don’t over-knead it because that will cause your steaks to become very tough.
  • As soon as you have a firm, stretchy texture, flatten it out and cut it into 4 roughly equal sized steaks. Use a potato masher to bash the steaks down a bit to flatten, but don’t do this too much as it counts as kneading, and you don’t want to overdo it.
  • Wrap the steaks individually in tinfoil and then steam them for 20 minutes. Don’t wrap them too tight as they will expand while steaming. You can steam them in a steamer basket over a pot of boiling water, or in any steamer that you have.
  • While the steaks are steaming, prepare your marinade sauce by adding all the ingredients to a bowl and whisking them together. Let it sit for a little while and then whisk again. You want it to be nice and smooth and it can take a couple of minutes for the brown sugar to dissolve properly.
  • After steaming for 20 minutes, unwrap the steaks from their tinfoil and place into a square dish. Pour over the marinade sauce and use a brush to make sure the steaks are properly covered. Turn them over in the sauce a few times.
  • Heat a pan with a little olive oil (or other oil, 1 Tbsp is fine) and then fry the steaks (I found they all fitted into the same pan) flipping them regularly and brushing more marinade sauce on them every time you flip them, until they are nicely browned and caramelized.
  • Serve with a side salad, baked potatoes with vegan sour cream, and if you like sauces with your steaks, then a creamy mushroom sauce goes wonderfully with this!

Notes

I really recommend you weigh out the wheat gluten for accuracy. I couldn’t find a ‘standard’ measure for a cup of wheat gluten, so just weighed it out and this is what I came to. But for accuracy, it would be best to weigh it.

These steaks keep very well in the fridge for 5-7 days and leftovers can be sliced up and used for vegan steak sandwiches.

If you want to make these in advance, you can make them up to the stage where they have finished steaming, and then unwrap them and place them in a sealed container for 3-4 days until you’re ready to marinade them and fry them up. You can also place them in the marinade sauce and then leave them for a day or two in the fridge soaking in the marinade and then fry them up when you’re ready. If they’re already in the marinade sauce then a couple of days is fine, if you want to keep them a little longer (3-4 days) then don’t put them in the marinade, just steam them, unwrap them and put them in a sealed container and only soak them in marinade when you’re ready to make them.

  • Prepare low-fat hummus recipe or use a low-fat hummus of your choice. If making your own, drain and rinse chickpeas. Place cooked chickpeas in a food processor or blender with 2 tablespoons fresh lemon juice, tahini, garlic (1/8 teaspoon garlic powder can be used instead of 1 clove fresh), and black pepper (for roasted red pepper version, add 1/2 cup or half of a water-soaked red pepper and cumin). Process until very smooth (about 1-2 minutes). If more liquid is needed, add more lemon juice or water. Garlic, cumin, and black pepper can be adjusted for personal taste preferences.

     Spread 1/4 cup of hummus over half of the tortilla.

  • About 2 inches in from one of the edges, make a line of 6 sun-dried tomatoes, repeating with 1/2 cup of sprouts, and topping with 1/8 teaspoon black pepper.
  • Options: Pour hot sauce over the sprouts. Then shred 1/4 cup of zucchini and 1/4 cup of carrot with the large slats of a grater and place them between the sun-dried tomato and sprout layers for a great texture.
  • Roll the tortilla to make your wrap. Repeat the above assembly process for the second tortilla. Reserve extra hummus for future use.

Adding salt at the end of a recipe allows you to use just the right amount.

This soup can also be prepared in a Crock-Pot. If you start with boiling water, it will cook in 1–2 hours; with cold water, 5–6 hours.

You can prepare a pot of this delicious soup and keep it on hand for quick meals. Reheat individual portions in the microwave and serve it with a salad of mixed greens and a slice of whole grain bread for a thoroughly nutritious and satisfying meal.

  • 2 cups Raw Cashews (300g) Soaked in hot water for 1 hour
  • 2 Tbsp Distilled White Vinegar
  • 4 Tbsp Refined Coconut Oil
  • 2 Tbsp White Miso Paste
  • 1 tsp Salt
  • 1 tsp Onion Powder
  • ½ tsp Garlic Powder
  • 2 Tbsp Water
  • tsp Spirulina

Instructions

  • Add cashews to a bowl. Pour over boiling hot water from the kettle so that the cashews are submerged. Leave them to soak for 1 hour. After 1 hour drain and rinse the cashews.
  • Add soaked cashews, white vinegar, refined coconut oil, white miso paste, salt, onion powder, garlic powder and water to a blender jug (or food processor) and blend until smooth.
  • Divide half the mixture between two 4.5 inch round springform pans (or bowls, or ramekins). Sprinkle the top of each with spirulina.
  • Then divide the remaining mixture between the two springform pans placing it on top of the sprinkled spirulina.
  • Smooth down and sprinkle more spirulina on top. Use a butter knife to gently and briefly swirl the spirulina through each cheese. You want to spread the spirulina through the cheese to create green/blue swirls. But don't mix it in, otherwise your whole cheese will turn green/blue.
  • Smooth down the top of each cheese. Place it into the freezer to set overnight.
  • Then let it sit in the fridge for 1 hour before removing from the springform pans and serving.

Notes

Refined coconut oil – we use refined coconut oil because it’s had the coconut flavor removed, so it has all the properties of coconut oil but without the coconut taste. If you want to use regular/virgin coconut oil you can, but you’ll likely find a coconut after-taste.

Spirulina powder – this just creates those lovely green/blue lines that we get through this cheese. If you’re not worried about having those lines, you can omit it.

Springform pans. We used two 4.5 inch springform pans. You can use springform pans or bowls or ramekins.

Food processor. This recipe also works great in a food processor. The texture initially may seem less smooth, but once it’s set you won’t notice any difference. If you don’t have a powerful blender then I recommend to make it in the food processor instead.

Fridge or freezer. This cheese will tend to get quite soft out of the fridge. Even straight from the fridge it can be fairly soft. So if you ever want to firm it up more, you can always place it back in the freezer for 30 minutes and let it set up more firmly and then serve.

Storing: Keep it stored in the fridge and enjoy within a week. You can also store it in the freezer for up to 3 months.

Servings: This recipe makes two 4.5 inch rounds of cheese.

  • cup Water (80ml)

  • ½ Medium Carrot (30g) peeled & sliced
  • 2 ½ tsp Salt
  • ¼ tsp Paprika
  • tsp Cayenne Pepper
  • 1 Tbsp Dijon Mustard
  • ¼ cup Nutritional Yeast
  • 1 tsp Garlic Powder
  • 1 cup Water (240ml)
  • 1 Tbsp Agar Agar Powder must be powder and not flakes*

Instructions

  • Add the cashews, ⅓ cup water, lemon juice, coconut oil, tahini, carrot, salt, paprika, cayenne, dijon mustard, nutritional yeast and garlic powder to the blender and blend until very smooth. Leave the mix in the blender and set aside.
  • Add 1 cup of water and the agar agar powder to a saucepan and heat, stirring regularly until boiling.  Boil it for 1 minute (time it), stirring regularly and after 1 minute remove it from the heat and pour it into the blender on top of the cheese mix.
  • Blend until smooth.
  • Moving quickly, as it will start setting up very fast, pour the mix out into a round dish sprayed with non-stick spray.
  • Refrigerate until set. To remove from the bowl, turn upside down onto a plate.

Notes

It is crucial for the success of this recipe that you use agar agar powder and not flakes. Flakes are much less powerful and if you DO use flakes you will need to use 3 times as much (3 tablespoons).

This might seem like a lot of salt, but it works perfectly in this recipe.

I used a regular round bowl, it was 5 inches round and 2 inches deep. I chose it because it was quite straight up the sides so created a nicer shape for the cheese. But you can really use any bowl or ramekin, and if your bowls are smaller, then just use 2 bowls for 2 smaller blocks of cheese.

This cheese can be grated but it tends to get firmer the longer it’s in the fridge. So it’s better for grating on the second day than on the day it’s made.

It does also melt. We put a slice on a cracker and put it in the microwave for 15 seconds and it melted. So yes it does melt!

We have also tried it on pizza. We tried it grated onto a pizza and sliced. Either way was great. We put it on with all our other toppings before going into the oven and it got nice and soft and melty along with the other toppings. It doesn’t spread or anything, but it’s very good.

This recipe makes one 21 ounce (600g) round of vegan cheese.

Serving size is 4 slices which is approximately 1 ounce.

  • 1 cup Water (240ml)
  • 1 Tbsp Agar Agar Powder

Instructions

  • Add the cashews, ⅓ cup water, lemon juice, coconut oil, tahini, soy sauce, tomato paste, apple cider vinegar, red pepper, salt, smoked paprika, cayenne pepper, dijon mustard, nutritional yeast, garlic powder and onion powder to the blender jug. Blend until smooth. Set aside, but do not remove from the blender.
  • Add the 1 cup of cold water and agar agar powder to a saucepan and bring to the boil, stirring constantly. Once boiling let it boil for 1 minute. You will notice it getting thick and gelatinous.
  • Remove from the heat and pour it into the blender on top of the cheese mix.
  • Blend until smooth.
  • Working quickly, as it will start to set very fast, pour it out into a round dish sprayed with non-stick spray.
  • Smooth it down and then place it into the fridge to set.
  • To remove from the bowl, turn it upside down onto a plate.

Notes

It’s really important to use agar agar powder and not the flakes. If you do use flakes you will need to use 3 times as much.

The bowl I used was 5 inches round and 2 inches deep, chosen because it goes quite straight up the sides so creates a nice shape for the cheese. You can use any round bowl or ramekin, and if your bowls are smaller, then just use 2 bowls for 2 smaller rounds of cheese.

This cheese can be grated, melted or smashed up on a cracker.

This recipe makes a 21 ounce (600g) round of vegan cheese.

Serving size is 4 slices which is approximately 1 ounce.

Keep it covered in the fridge and consume within a week. It’s also freezer friendly for up to 3 months.

  • Add the soaked cashews to a blender jug along with lemon juice, coconut cream, distilled white vinegar, salt, onion powder and sun dried tomatoes.
  • Blend until smooth.
  • Move to a bowl and add dried basil. Stir it in.
  • Your cashew cheese spread is ready to serve!

Notes

Coconut cream – should be canned and unsweetened. You could also use full fat, canned, unsweetened coconut milk.

Lemon juice – should ideally be freshly squeezed as that has the best flavor, but bottled will also work.

Sun dried tomatoes – can be in oil or vinaigrette, but drain them before using them.

Blender or food processor: If you don’t have a powerful blender then it would be better to make this in the food processor. It may not come out quite as smooth but it will still be totally delicious.

Storing and freezing: Keep it stored in the fridge in a covered container and enjoy within 5 days. It is also freezer friendly for up to 3 months. Thaw it in the fridge and then mix it up very well again before serving.

How to Cook Beans

There is not one single method of cooking beans. At its most basic, you want to simmer the pot until the beans are soft. Soaking can speed up the process and vegetables or stock will make them more flavorful. It’s really that simple. There’s all kinds of fine tuning and variables, but basically, this is it.

Normally on a bean cooking day (which frankly is everyday at Rancho Gordo), I put the beans to soak in the morning, after rinsing in lots of cool water and checking for small debris. I cover the beans by about an inch or so of water. If you haven’t soaked, don’t fret. Go ahead and cook them, knowing it will take a bit longer.

Heirloom and heritage varieties don’t need a lot of fussing if they are used fresh, which I’d define as within two years. You can use a ham bone, chicken stock or as I prefer, simply a few savory vegetables. A classic mirepoix is a mix of onion, celery and carrot diced fine and sautéed in some kind of fat, often olive oil. A crushed clove of garlic doesn’t hurt. If I’m cooking Mexican or Southwestern, I will sauté just onion and garlic in mild bacon drippings or even freshly rendered lard.

Add the beans and their soaking water to a large pot. You have been told before to change the water and rinse the beans. The thinking now is that vitamins and flavor can leach out of the beans into the soaking water you are throwing down the sink. There is conflicting scientific evidence that changing the water cuts down on the gas. If you want to, do it. If it seems unnecessary, don’t.

If you’ve soaked them, the beans will have expanded, so make sure they are covered by at least two inches of water, maybe even a bit more. Add the sautéed vegetables and give a good stir. Raise your heat to medium-high and bring to a hard boil. Keep the beans at a boil for about ten to fifteen minutes. After so many years, I think this is the moment that really matters. You have to give them a good hard boil to let them know you’re the boss and then reduce them to a gentle simmer, before covering. I like to see how low I can go and still get the occasional simmering bubble. Open and close the lid, or keep it ajar to help control the heat and allow evaporation. The bean broth will be superior if it’s had a chance to breathe and evaporate a little.

When the beans are almost ready, the aroma will be heady. They won’t smell so much like the vegetables you’ve cooked but the beans themselves. At this point, I’d go ahead and salt them. Go easy as it takes awhile for the beans to absorb the salt. If you want to add tomatoes or acids like lime or vinegar, wait until the beans are cooked through.

If the bean-cooking water starts to get low, always add hot water from a tea kettle. Many believe that cold water added to cooking beans will harden them. At the very least, it will make the cooking take that much longer to bring them back to a simmer. We don’t recommend using hot tap water, straight from a water heater. Better to heat the tap water in a tea kettle or pan first.

So you’re done! Once you’ve mastered this method, go ahead and try some different techniques. Your bean friends will swear by this or that method and you should take their advice, keeping in mind there are few absolutes when it comes to cooking beans, only that it’s very hard work to mess up a pot of beans.

Stovetop Basics (Step-by-Step)

  1. Check the beans for debris, and rinse in several changes of water.
  2. Saute aromatic vegetables in olive oil.
  3. Add the dried beans and enough liquid to cover by about 2 inches.
  4. Bring the pot to a rapid boil for 10 to 15 minutes.
  5. Lower the heat to a gentle simmer until the beans are done, between 1 hour and 3 hours. If the bean-cooking water starts to get low, add hot water.
  6. Salt when the beans are just starting to turn soft.

Cooking Beans in the Oven

For a pot of simple baked beans, we recommend the Parsons Method. Russ Parsons of the Los Angeles Times, and author of How to Pick a Peach, came up with this technique: Put 1 pound of beans in a Dutch oven with 6 cups of water. Add aromatics if you like, such as garlic, onion, bay leaf, etc. Bring to a simmer on top of the stove, and simmer for 10 minutes. Cover the pot and transfer it to a 350F oven to bake until the beans are done. This can take anywhere from an hour to 2 hours, depending on the type and age of the bean. Add 1 teaspoon of salt once the beans begin to soften. Check the water level often and add more hot water as needed.

Cooking Beans in a Crockpot

Sauté half of a chopped onion in about one tablespoon of fat (oil, lard, bacon fat, etc.). Place in a crockpot along with any other aromatics you’d like (such as Mexican oregano, garlic, bay leaf), followed by beans that have been picked over and rinsed. Cover with plenty of water (about one part beans to three or four parts water). Turn the heat to “high” and give the contents a stir. Do this in the morning, and your beans should be done by the afternoon. Cooking time will be 4 to 6 hours, depending on your crockpot and the variety of beans.

Cooking Beans in a Pressure Cooker

First, consult the manufacturer’s instructions for the exact method for your model. Place cleaned beans in the pressure cooker and cover with three or four parts water. Generally, you want to cook under pressure for 20 to 40 minutes, depending on the bean, release pressure naturally, and then cook open on the stovetop for another 20 minutes to develop the broth.

Some Handy Cooking and Storing Tips

  • You can expect 1 cup of dried beans to yield about 3 cups cooked beans. One pound of dried beans (which is about 2 cups) will yield about 6 cups cooked beans.
  • If a recipe calls for canned beans: 1 15-oz can of beans equals about 2 cups cooked beans.
  • Our beans are so fresh that soaking is not needed. It will, however, speed up the cooking time and can help the beans to cook more evenly, so if you have the time to do it, it won’t hurt. We don’t recommend soaking more than 6 hours or the beans may begin to sprout.
  • Keep an eye on the water level during cooking to avoid scorching the beans. They should be covered by about 2 inches of water at all times. Add more hot water to the pot as needed (cold water will slow down the cooking).
  • Many believe that adding salt (or acids like tomatoes and vinegar) too early in the cooking process prevents the beans from getting soft. We find this especially true with older beans.
  • You can store leftover cooked beans in the refrigerator for up to 5 days and you can freeze them as well. If you are storing beans in the refrigerator, keep them in their cooking liquid so they don’t dry out.
  • If a recipe calls for drained beans, be sure to save the extra liquid. You can use it for many things, including poaching eggs, adding moisture to dishes, and making soups.
  • Store dried beans in a cool, dark place. It’s fine to keep them in their Rancho Gordo packaging, although some prefer to transfer them to a glass jar with a lid or an airtight container. They should be good for about 2 years. After that, they are still edible but the quality will begin to decline.

  • Place into the fridge for at least an hour to firm up and then enjoy.

Notes

Place the raw cashews into a bowl and pour over boiling water from the kettle. Leave it to sit for an hour and then drain and rinse. Don’t let them soak for longer than an hour as this can cause the cashews to absorb a larger amount of water and you could end up with a watery cottage cheese.

Prep time is for hands on time only and does not include the time spent soaking the nuts or the time firming up in the fridge.

  • Prepare a loaf pan or square dish by spraying with non-stick spray. Set aside.
  • Add one cup of water and a tablespoon of agar agar powder to a saucepan and bring to the boil stirring constantly. When it starts boiling, set a timer and let it boil (while you continue to stir) for 1 minute.
  • Moving very quickly, as the agar starts to set up fast, pour out the agar/water mix into the blender with the other ingredients and blend in quickly. Then, again very quickly, pour this out into your prepared loaf pan.
  • Smooth it down and then place into the fridge and leave it to set.
  • Once the feta cheese has set, loosen the sides with a knife and tip it out onto a wooden board.
  • Cut it into slices and then cut the slices into cubes.
  • Place the cubes into a bowl with a lid, add the dried oregano and dried dill (optional) and then put on the lid and rotate the bowl so that all the pieces of feta get evenly covered.
  • Now your vegan feta is ready to serve.
  • Keep it stored in the fridge and enjoy within about a week. It is also freezer friendly if you think you may not finish it within a week.

Notes

We did not soak the cashews first, but we are using a Vitamix. If you think your blender might struggle, then soak the cashews in hot water for 15 minutes.

This must be the agar agar powder and not the flakes. If you’re using the flakes you will need to use 3 times as much to get the same result.

This recipe makes around 22 ounces (623g) of vegan feta cheese.

Keep it in a sealed container in the fridge and it will stay fresh for around a week. It also freezes very well and can be frozen for up to 3 months.

  • Use it in place of an egg in recipes, it’s not an exact science, but usually 1 for 1, so 1 flax egg replaces 1 chicken egg in a recipe.

Notes

This recipe won’t work for things like vegan meringues!You definitely can’t whip it.

However, in cakes and quick breads and pancakes and muffins, it works perfectly!

It’s best to make one up fresh each time you need it. However, you can store it covered in the fridge for 1-2 days if needed.

  • Leave this in your blender while you work on your agar agar mix. Add cold water and agar agar powder to a saucepan. Bring to a boil on medium heat, stirring continuously.
  • When it reaches a boil, set a timer and boil it for 1 minute, stirring all the while. You will notice it getting thick and gelatinous.
  • Quickly remove it from the heat and pour it into the blender jug on top of the previously blended cheese mix.
  • Blend briefly to mix everything together well.
  • Pour this out into two 4.5 inch round springform pans (or bowls, or ramekins) and smooth down.
  • Sprinkle with dried herbs. Place into the refrigerator until set. It should start setting right away but be fully set and firm to the touch within an hour or two.
  • Once set, gently remove it from your springform pans or bowls and serve.
  • Serve with crackers, bread or toast, red grapes, walnuts, lemon slices and apricot jam.

Notes

Soaking the cashews – this makes for an easier blend but also creates a softer, lighter texture that works really well in this vegan goat cheese.

White vinegar – there is some magically cheesy flavor that is created with the use of distilled white vinegar. It doesn’t work nearly so well with any other vinegar, so I don’t recommend substituting this with anything else.

Lemon juice – should ideally be freshly squeezed for the best flavor. However, bottled will also work in a pinch.

Almond milk – is great for this as it has a neutral flavor in this recipe and a very white color, which keeps this cheese very white. You could substitute this with a different non-dairy milk but you may have differences in the color and it may also impact the flavor.

Coconut oil – should be refined/odorless. We have made this with regular/virgin coconut oil but the coconut taste came through and interfered with the other flavors so refined coconut oil is best for this recipe. If you use a different oil, it may affect the color of this cheese and it also may not set quite as well.

Agar agar powder – this should be the powder and not the flakes. It should also be a pure product, 100% agar agar and not mixed with other ingredients. If you do have to use the flakes then you will need to use 3 tablespoons.

Dried herbs – we used a dried herbs mix containing oregano, thyme, rosemary, basil, parsley and tarragon, but you could use any mix or just use oregano and thyme.

The agar agar mix needs to have a chance to activate properly. The agar agar powder should be added to cold water and heated in a saucepan with the water, stirring all the while until it boils. Then it needs to boil for a full minute, stirring all the while. You will notice it thicken and become very gelatinous.

You need to work quite quickly. Once the agar agar and water mix is poured into the blender, you need to blend it up fast and then transfer the cheese mix to your prepared spring form pans, bowls or ramekins. The reason for speed is that the cheese starts to set up fast.

Springform pans: We used two 4.5 inch round spring forms for this recipe. You can make one larger cheese round or two smaller rounds or three mini rounds. Just use whatever bowls or ramekins you have on hand.

Storing.It can be stored in the fridge for 7 days (covered).

Freezing. It can be frozen for up to 3 months. The texture after thawing will tend to be a little more firm than before.

Notes

Raw cashews – the cashews must be raw and plain so that they create that perfect neutral creamy flavor.

Almond milk – or plain water both work great. We loved the pairing of almond milk with this as it really created a beautifully neutral flavor. However, you can also pair this with other non-dairy milks OR just plain water. Just keep in mind that certain non-dairy milks (like soy for example) may create an overall flavor that is less neutral.

Substitutes for cashews:

Sunflower seeds: Shelled sunflower seeds can also work. Soak them the same way you would soak the cashews.

Blanched or slivered almonds: Soak them for a minimum of 1 hour in boiling hot water and use a high speed blender to blend it super smooth.

Whipped cream – unfortunately this will NOT work for making whipped cream. Check out our tutorial for vegan whipped cream (made from coconut cream).

Storing: Store it in an airtight container or jar in the fridge for up to 1 week. Give it a stir before using.

Freezing: It is also freezer friendly for up to three months. It can look like it’s curdled as it thaws, but it’s actually fine! Just give it a quick blend in the blender again and it’s good to go.

  • After 1 hour, drain and rinse the cashews.
  • Preheat the oven to 350°F (180°C).
  • Add the soaked cashews, lemon juice, nutritional yeast, miso paste, salt and vegetable stock to the blender jug and blend until very smooth.
  • Line two oven-safe ramekins (~3 inches round, 2.5 inches deep) with parchment paper. Secure the parchment paper in place with a rubber band (remove it before baking).
  • Divide the vegan brie between the two prepared ramekins.
  • Bake for 30 minutes.
  • Let them cool at room temperature until cooled and then transfer to the fridge to chill completely before removing from the ramekins.
  • Serve with fruit and crackers for a wonderful appetizer

Notes

Nutritional yeast – adds to the cheesy flavor. If you’re not a fan of nutritional yeast, you can leave it out, but it is highly recommended.

White Miso paste – white miso paste (often not actually white at all in color) works wonderfully but you can also use red or brown miso paste.

Blender or food processor. If you don’t have a good blender then this also works great in a food processor. It can seem as if it’s a little more grainy but once baked etc, you don’t know the difference.

Ramekin sizes. The exact sizes of your ramekins aren’t important. If you have one bigger ramekin (5-6 inches) then you’ll just get one bigger round of cheese instead of the two smaller ones that we got.

Serving. This vegan brie pairs very well with red grapes, strawberries and figs. We love it on crackers with fig jam.

Storing and Freezing: Store your brie in a covered container in the fridge for up to 7 days. It is also freezer friendly for up to 3 months. Let it thaw in the fridge overnight and then serve as usual.

  • 1 pinch Tumeric
  • ½ tsp Salt

Instructions

  • Add melted refined coconut oil to the blender jug along with the canola oil.
  • Add the apple cider vinegar to the unsweetened soy or almond milk and stir in so that it curdles into buttermilk. Add the buttermilk to the blender.
  • Add the nutritional yeast, small pinch of turmeric and salt.
  • Blend very well until smooth.
  • Pour out into a butter dish and refrigerate until set.
  • Remove from the fridge to thaw for a few minutes if using on fresh bread or creaming with sugar for baking.

Notes

The coconut oil must be refined coconut oil and not extra virgin coconut oil.

Avocado oil is a great option to use instead of canola oil. Olive oil also works but bear in mind that high speed blending can cause olive oil to become bitter. If using olive oil, add it in at the end and mix in without blending.

Storing: This lasts up to 2 weeks in the fridge. If you need it to last longer, freeze the excess and only keep what you will use within 2-weeks in your fridge.

Make it soft and spreadable: This butter recipe above comes out a lot like a traditional butter in that it’s very firm straight out the fridge and needs to soften first before it becomes spreadable (unless you’re spreading on toast, in which case you’re good to go!). This makes it great for the purposes that a regular butter is good for. However, if you want to use it mostly as a spread (that also works for baking and frying) and want it soft and spreadable straight out of the fridge then adapt the first two ingredients of the recipe as follows: ½ cup (120ml) Refined Coconut Oil and ½ cup (120ml) Canola Oil or Avocado Oil (OR ¼ cup (60ml) of each canola oil and avocado oil) and then follow the rest of the recipe exactly as it is. This results in a soft, spreadable vegan butter that still works great for baking and frying. Thanks to one of our readers for experimenting with the recipe and coming up with this adaptation.

Instructions

  • Place raw cashews into a bowl. Pour over boiling hot water from the kettle. Leave them to soak for 1 hour. Then drain and rinse.
  • Preheat the oven to 350°F (180°C).
  • Add the soaked cashews, garlic, salt, nutritional yeast, distilled white vinegar, onion powder, dijon mustard and vegetable stock to the blender jug and blend until smooth.
  • Prepare two oven safe ramekins (~3 inches round, 2.5 inches deep, see notes*) by lining them with parchment paper. You can secure the parchment paper in place with a rubber band. Just don’t forget to take the rubber bands off before you bake.
  • Pour the cheese mix into the ramekins, dividing it evenly between them.
  • Sprinkle the top of the cheeses with ground rainbow peppercorns.
  • Bake in the oven for 30 minutes.
  • Allow them to cool at room temperature until they’re cool and then place into the fridge to chill completely before removing them from their ramekins.
  • Slice and serve on bread or crackers or as part of a vegan cheese board.

Notes

Nutritional yeast. If you’re not a fan of nutritional yeast for any reason you can omit it. The recipe will still work without it, though it will lose some of the cheesiness.

Distilled white vinegar. This works wonderfully for adding cheesy flavor to recipes. Apple cider vinegar will work in a pinch but white vinegar is the best.

Ramekins. We used two small oven safe ramekins (3 inches round, 2.5 inches deep). If you have a bigger ramekin you can just use one. The exact size isn’t important, you just want to be able to fit your cheese mix into it. So if you have smaller ramekins maybe you will make 3 smaller cheese rounds, or if you have a bigger one (5-6 inches round), you can make a single cheese round. Of course make sure it’s oven safe so that you can bake it.

Let the cheese chill. It’s ideal to let the cheeses cool at room temperature until they have reached room temperature and then move them to the fridge to chill completely. You want them to be completely cold and feel firm to the touch before you remove them from the ramekins. This will make them easy to slice as well.

Storing and Freezing. Keep your cheese stored in the fridge and enjoy within a week. It is also freezer friendly for up to 3 months. Thaw in the fridge and enjoy.

Serving size. This recipe makes 2 small cheeses or 1 larger round cheese. Nutritional information is calculated as 4 serves per small cheese, and 8 serves in total.

Prep time is for hands on time only and does not include the time spent soaking the cashews.

If you have a stick attachment with your blender then use this to push the cream cheese down onto the blades making it easier to blend. If you don’t have a stick attachment then stop regularly and scrape down the sides and give it a stir and then continue until it’s very smooth.
  • Transfer the blended mix to a bowl and then add in the dried dill and stir or whisk it in.* Your cream cheese is now ready to use.
  • Keep it stored in the fridge. It will firm up overnight in the fridge so will have a firmer texture on day 2 vs on the day you make it.

Notes

Soak the cashews. I place the cashews into a bowl and then pour boiling water from the kettle over them. Then just cover with a cloth and leave for an hour to soak.

Coconut cream. You can also use canned, full fat, unsweetened coconut milk.

Dried dill. The dried dill is an optional add on, but it adds a lot of delicious flavor so is recommended. You could use dried chives or dried basil instead (in the same quantity).

Quantity. This recipe makes 13-ounces or around 1 and ⅔ cups.

Storing. Keep it stored in the fridge for around 5 days. It’s also freezer friendly for up to 3 months.

  • As soon as it starts to bubble along the sides, set your timer for 2 minutes and keep stirring, after the 2 minutes has timed out, remove from the heat, pour it out into two ramekins sprayed with non-stick spray.
  • Place them into the fridge for at least 1 hour to set. At this stage you have mozzarella cheese that is ready to be used! Use an ice cream scoop to scoop mozzarella balls to use on pizza!
  • The longer the vegan mozzarella stays in the fridge the firmer it will get, but it will still remain a soft cheese.

Notes

I tried a version with soaked cashews (soaked in boiling water for 15 minutes) and a version where they were not soaked and there was no difference that I could tell, so I do not see a reason to soak the cashews here.

Refined coconut oil is a better choice here as it is neutral in taste so the end result doesn’t have a coconut flavor. However, I have tried a version using extra virgin coconut oil, and it’s still very tasty but it definitely does result in a coconut flavored cheese. If you prefer to use extra virgin coconut oil, you can go ahead, but just know that your end result is going to be coconut flavored.

Store it in the fridge (covered) where it will last for about a week. It is also freezer friendly. So if you think you won’t be able to finish it all, then freeze some of it.

I did not soak my cashews first and it’s not necessary for this recipe.

The turmeric is just for color, so if you don’t like it you can omit it.

My vegetable stock is quite salty, so extra salt wasn’t needed but if you use a low sodium vegetable stock you might need to add salt to taste.

  • Add the vegetable stock, canola oil, tamari, tomato paste, maple syrup, liquid smoke and dijon mustard to a bowl and whisk together and then add to the dry ingredients and mix into a thick dough.
  • Knead the dough for 2 minutes until it feels firm to the touch. Break it into two pieces and form it into two sausage shaped logs. It won't be perfect at all, but just press it into the shape the best you can.
  • Wrap the sausage logs in parchment paper and then in foil, don't wrap the foil too tight as the pepperoni can expand slightly when steaming.
  • Steam in a steamer basket over boiling water for 40 minutes. If some oily residue appears in your steamer basket, don't worry about it, this is normal.
  • Let the pepperoni cool on the countertop and then place into the fridge until chilled.
  • Unwrap it from the foil and parchment paper and your vegan pepperoni is ready to be used!
  • Keep leftovers in the fridge in a covered container and use within 5-6 days. It is also freezer friendly if you want to freeze it, let it thaw overnight in the fridge and then use as normal.

You can increase the red pepper flakes if you like things spicy. As it is this recipe is only mildly spicy.

You can likely use a different oil other than canola, but I have only tested this with canola oil.

If you don’t have canned coconut cream then full fat canned unsweetened coconut milk will also work.

You can omit the nutritional yeast but you will lose some of the cheesy flavor.

Distilled white vinegar works best for flavor though apple cider vinegar will work in a pinch.

If you’re wanting to use this recipe in another recipe, then this makes approximately 1 and ⅔ cups of vegan ricotta.

Prep time does not include the time to soak the slivered almonds.

  • Then place the dough onto a wooden board and flatten it out with your hands.
  • Cut it first into strips and then cut the strips into chunks. Set aside.
  • Salami:Add vital wheat gluten, nutritional yeast, smoked paprika, onion powder, garlic powder and red pepper flakes (chili flakes) and mix together.
  • Now add toasted sesame oil, soy sauce, tomato paste, maple syrup, liquid smoke, dijon mustard, crushed garlic, pickled beets, salt and ground black pepper to a blender jug and blend until smooth.
  • Pour this out over the dry ingredients and mix in.
  • Get in there with your hands and form it into a dough and knead for around 1 minute.
  • Then flatten it out on a wooden board with your hands. Place the chunks of white fat on top.
  • Roll it into a ball and then form it roughly into a sausage shape.
  • Cut the sausage into two and then roll each half in ground black pepper.
  • Wrap the two sausages in parchment paper and then in foil, twisting the ends of the foil to seal it.
  • Place them into a steamer basket over a pot of boiling water and steam for 40 minutes.
  • Let them cool on the counter until they reach room temperature and then place into the fridge (still sealed) and cool until chilled.
  • When completely cooled, unwrap the salami from the foil, and cut into slices and serve.

Notes

Vital wheat gluten – this is the crucial ingredient for vegan meats or ‘seitan’ as it’s also known. Unfortunately there is no good substitute for this at all, so there is no gluten-free option for this recipe.

Pickled beets – you can use pickled beets in this recipe or simply use cooked beets.

Don’t knead too long. This recipe does require some kneading but only a little. Knead for around 1 minute for both the white fat part of the salami and the ‘meat’ part of the salami. If you knead for too long the salami will be too tough and chewy.

Storing and Freezing: Keep your vegan salami stored in the fridge where it will stay good for up to a week. It is freezer friendly for 2-3 months.

Serving size: This recipe makes two large salami sausages. This contains approximately 16 serves at 4 slices per serve.

Notes

Cashews: You don’t have to soak the cashews first in this recipe if you have a strong blender. But if you know your blender is likely to have a hard time, then you can soak them in hot water for 15 minutes just to soften them slightly so they’re easier to blend. Place them in a bowl, pour over boiling hot water from the kettle and leave them to soak for 15 minutes. Then drain, rinse and continue with the recipe.

Substitute for cashews: If you need a substitute for cashews then you could try slivered or blanched almonds. If you’re using slivered or blanched almonds then definitely soak them first and in this case, soaking overnight would be the best option so you can get the texture as smooth as possible.

Consistency: The consistency of this sour cream is fairly thick. It also tends to thicken up more in the fridge. If you’d like a thinner consistency then blend in more water. If it’s thickened up in the fridge then add a dash of water and whisk it in. Be careful not to add too much and make it runny.

Quantity: This recipe makes around 1 cup of sour cream. You can easily double the recipe if you need to. If you are using a blender with a wide base then it would be best to double the recipe so that there is enough volume for the blades to gain traction.

Storing and Freezing: It lasts about a week in the fridge in a sealed container. It is also freezer friendly so if you think you’ll take longer than a week to eat it all, then definitely freeze some of it. Just place it into a freezer safe container and freeze.

  • For crepes, combine flour and egg replacers in a medium bowl. Slowly stir in the milk and beat with a wire whisk until the batter is smooth.
  • Pour ¼ cup batter in nonstick skillet or crepe pan. Tilt and rotate the skillet to distribute the batter evenly over the bottom of the pan. Cook for 1 minute or until bubbles appear on surface of crepe. Turn the crepe over and cook briefly on the other side. Repeat this process with the remaining batter.
  • Preheat oven to 350°F.
  • For the filling, sauté asparagus in ¼ cup vegetable broth in a large skillet over medium-high heat until tender.

  • ¼ cup Red, yellow or green pepper

Instructions

  • Preheat oven to 350° F
  • Add all the vegetable, except the flaxseed, together in a big bowl and mix them up.
  • Add all the liquids, herbs and spices in a jug. Mix well and pour over vegetable salad. Mix well with the vegetables.
  • Transfer the vegetable mix to a baking dish and spread out evenly. Bake for 30 minutes.

    OR

    Transfer to a pot and cook on a stove top for 45 minutes on medium heat with the lid on. Stir occasionally.

  • Grind the flaxseed in a coffee grinder and sprinkle it onto the vegetables just before you dish it up to eat.
  • Serve as is or on a bed of cooked sorghum.

  • 1 medium Onion, diced

  • 1 13,5-oz Can Unsweetened lite coconut milk
  • 6 ounces Fresh spinach or 1 packet frozen, thawed and drained
  • 2 cups Whole grain sorghum, uncooked
  • Sea salt to taste

Instructions

  • Heat 2 tablespoons vegetable broth in a large pot and cook the onion, pepper, and garlic over medium-high heat until vegetables are soft. Add cumin and beans.
  • Add water, coconut milk, spinach, and sorghum. Bring to a boil. Then reduce heat to low, cover, and cook for 30–35 minutes, stirring every 7–10 minutes until sorghum is cooked.
  • Season with salt. Serve hot.

  • 6 cups Broccoli, chopped
  • 8 ounces Whole wheat fettuccine
  • ½ cup Cashews, raw
  • 1 ¼ cup Water
  • 2 tbsp. Vegetable broth

  • 1 tbsp. Miso
  • ½ tbsp. Nutritional yeast
  • 1 tsp Tahini
  • ¼ tsp Smoked paprika
  • Sea salt and black pepper to taste

Instructions

  • Steam broccoli over boiling water until it is just tender, about 5 minutes. It should be bright green and still slightly crisp. Drain and set aside.
  • Cook fettuccine in boiling water until it is just tender. Drain and rinse quickly.
  • Process cashews and water in blender until smooth.
  • Heat 2 tablespoons vegetable broth in a skillet over medium-high heat. Sauté the garlic. Add cashews mixture, miso, nutritional yeast, tahini, and smoked paprika. Cook over medium heat for 7 minutes. Season with salt and pepper.
  • Spread the fettuccine on a large platter, top with broccoli, and add sauce. Serve hot.

Notes

Be sure to use the broccoli stems, trimmed. They are crunchy and delicious.

For a cheesier flavor, add 2–4 tablespoons of nutritional yeast to cashew sauce.

For extra flavor, use tomato basil fettuccine or try a wheatless fettuccine such as artichoke or corn.

  • 3 Green onions, sliced
  • ¼ cup Peanuts, crushed
  • Sea salt to taste

Instructions

  • Cook 1 pound pasta and set aside.
  • In a large skillet, add ¼ cup vegetable broth, onions, peppers, broccoli, and carrot. Cook for 5 minutes until vegetables are slightly cooked.
  • Stir in pasta, basil, and sesame seeds. Set aside.
  • In separate saucepan, add peanut butter, tamari or soy sauce, rice vinegar, ginger, garlic, and agave. Cook over medium heat, stirring constantly, until mixture is smooth. Pour over noodles.
  • Garnish with green onions and peanuts. Season with salt.

Notes

Snow peas and cauliflower are both great substitutes for broccoli.

To make beautiful and easy julienne strips of carrot, use a vegetable peeler or julienne peeler.

  • 1 14-oz Package extra-firm tofu
  • 5 cups Fresh spinach
  • 4 cloves Garlic
  • 1 tbsp. Dried oregano
  • 1 tbsp. Dried basil
  • ½ tsp Sea salt
  • 8 cups Marinara Sauce (see condiments)
  • 1 16-oz Package brown rice lasagna noodles

Instructions

  • Preheat oven to 350°F.
  • Combine tofu, spinach, garlic, oregano, basil, and salt in food processor. Blend until smooth. Set aside.
  • Spread ½ cup marinara sauce over bottom of a 9 × 13 baking dish. Layer with noodles, then top with half the tofu mixture and ½–1 cup marinara sauce. Top with another layer of noodles, remaining tofu mixture, and another layer of marinara sauce. Finish with a third layer of noodles and remaining sauce.
  • Cover with foil and bake for 1 hour. Wait 10 minutes before serving.

You may add additional marinara sauce to this recipe if you like a juicier lasagna.

  • 30 Baby portobello mushrooms
  • ¼ cup Vegetable broth
  • ½ large Onion, diced

  • 1 tsp Thyme, dried
  • 1 tsp Worcestershire sauce
  • 4 tbsp. Red wine
  • ½ tsp Sea salt
  • ¼ tsp Black pepper
  • 1 cup Bread crumbs
  • 12 cups Fresh spinach, steamed until wilted, then drained

Instructions

  • Clean the mushrooms and remove the stems.
  • Heat 2 tablespoons vegetable broth in a medium skillet over medium-high heat. Add onion, garlic, and celery and cook until onions are soft. Remove from heat.
  • Stir in remaining 2 tablespoons vegetable broth, thyme, Worcestershire sauce, salt, black pepper, red wine, and bread crumbs. Mixture should stick together. If not, add additional vegetable broth.
  • Stuff mushrooms with filling. Place stuffed mushrooms in nonstick baking dish. Bake, covered at 350° for 25–30 minutes.
  • Meanwhile place steamed spinach on a serving platter and top with cooked mushrooms.
  • Serve immediately.

  • ½ cup Whole grain pastry flour
  • ½ – ¾ cup Soy milk
  • 1 – 2 cups Italian bread crumbs
  • 1 large Eggplant, peeled, sliced ¼- to ½- inch thick, lengthwise
  • 2 28-oz Jars of marinara sauce (or equal batch of Marinara Sauce, see condiments)
  • 1 10-oz Package spaghetti or other whole grain long noodles, cooked

Instructions

  • Preheat oven to 350°F.
  • Place pastry flour in a shallow bowl. Pour milk in a second shallow bowl. Place bread crumbs in a third shallow bowl. Bread eggplant slices by first dredging each slice in the flour, then covering with milk, and finally covering with bread crumbs. You may need to add more flour, milk, or bread crumbs depending on the number of slices your eggplant yields.
  • Place breaded slices on a parchment-lined baking sheet. Bake for 20 minutes, until brown, turning once halfway through. Remove from oven, but keep oven at 350°F.
  • Spread ½ cup marinara sauce over bottom of a 3-quart baking dish. Layer with eggplant slices. Add another layer of marinara. Top with remaining eggplant slices and cover with marinara sauce.
  • Cover with foil and bake for 30 minutes. Serve on top of spaghetti.

Instructions

  • Sauté garlic and onions in 2 tablespoons vegetable broth.
  • Add remaining vegetable broth, chickpeas, bulgur, and lentils in a soup pot. Bring to a boil, then simmer, partially covered, for 15 minutes.
  • Add sweet potatoes and seasonings. Continue to cook for 25 minutes, or until sweet potatoes and lentils are tender.
  • Serve immediately.
