Fiesta Potato Salad

Ingredients

  • 4 large Potatoes, peeled and diced
  • 1 pound Beets, diced
  • 1 cup Carrots, diced
  • 7 tbsp. Garden Mayonnaise (see condiments)
  • 1 Red onion, diced
  • ¼ cup Vinegar
  • Sea salt to taste

Instructions

  • Boil potatoes, beets, and carrots in large saucepan. Drain vegetables and cool to room temperature. Place in a large bowl.
  • Add mayonnaise, onions, and vinegar to vegetables. Mix until vegetables are covered.
  • Season with salt. If necessary (depending on your preferences), add more vinegar and/or mayonnaise.
