Fiesta Potato Salad

Fiesta Potato Salad
Servings: 6 cups
Ingredients
- 4 large Potatoes, peeled and diced
- 1 pound Beets, diced
- 1 cup Carrots, diced
- 7 tbsp. Garden Mayonnaise (see condiments)
- 1 Red onion, diced
- ¼ cup Vinegar
- Sea salt to taste
Instructions
- Boil potatoes, beets, and carrots in large saucepan. Drain vegetables and cool to room temperature. Place in a large bowl.
- Add mayonnaise, onions, and vinegar to vegetables. Mix until vegetables are covered.
- Season with salt. If necessary (depending on your preferences), add more vinegar and/or mayonnaise.

This potato salad goes well with Dominican Beans (see Legumes)
