Sauerkraut Soup

Ingredients
- 2 medium Onions, chopped
- 3 large Carrots, chopped
- 3 Celery ribs, chopped
- 4 cups Vegetable broth, divided
- 2 cups Fresh mushrooms, sliced
- 2 cups Potatoes, peeled and cubed
- 1 14-oz Can vegan ream of mushroom soup (Amy's brand makes a vegan version)
- 1 14-oz Can Sauerkraut
- 2 tbsp. White vinegar
- 2 tbsp. Dried dill
- 1 tsp Sucanat
- ¼ tsp Black pepper
- Sea salt to taste
Instructions
- Place onions, carrots, and celery in a large pot. Add ½ cup vegetable broth and cook until onions are translucent.
- Add remaining ingredients and simmer until potatoes are soft and tender.
