Ingredients

  • 2 medium Onions, chopped
  • 3 large Carrots, chopped
  • 3 Celery ribs, chopped
  • 4 cups Vegetable broth, divided
  • 2 cups Fresh mushrooms, sliced
  • 2 cups Potatoes, peeled and cubed
  • 1 14-oz Can vegan ream of mushroom soup (Amy's brand makes a vegan version)
  • 1 14-oz Can Sauerkraut
  • 2 tbsp. White vinegar
  • 2 tbsp. Dried dill
  • 1 tsp Sucanat
  • ¼ tsp Black pepper
  • Sea salt to taste

Instructions

  • Place onions, carrots, and celery in a large pot. Add ½ cup vegetable broth and cook until onions are translucent.
  • Add remaining ingredients and simmer until potatoes are soft and tender.
